  • 400 ml water
  • 750 g sugar
  • 20 ml lemon juice
  • 3 cups self raising flour
  • 1 ½ cup plain yogurt
  • oil for frying

Boil the water, sugar and lemon juice together, reduce the heat and let it simmer for 10 minutes. Place the syrup in fridge for 4 to 6 hours.
Sift the flour and fold in the yogurt until the mixture form a dough.
Knead the dough for 10 min.
If the dough is too sticky, add more flour.
Roll out the dough and cut in to strips. Lay three strips over each other and braid.
Cover all the koeksisters with a wet cloth while you are baking.
Fry in hot oil till golden brown.
Dip in the cold syrup, remove koeksisters from syrup, pack on a wire rack allow to cool and enjoy.
