KINGSLEY CAFÉ DRESSING

Lockdown day #60 🇿🇦 Kingsley Café dressing for salad. Goes well with grilled chicken & chorizo. In the dressing is whole orange & lemon, honey, horseradish, wholegrain mustard, mayonnaise & olive oil. It’s my chef cousin in Cornwall UK’s recipe 😉

Its named after his first restaurant in Fraddon, Cornwall.

  • 1 whole orange (wash the skin well as you are using everything except the pips)
  • 1 whole lemon (as for orange above, thin skinned lemon works better)
  • 50 ml honey
  • 50 ml horseradish
  • 50 ml wholegrain mustard
  • 500 ml olive oil (or oil of choice)
  • 100 ml mayonnaise

Whizz all the ingredients together in Robot Coupe or food processor and pass through a sieve. Bottle and keep in fridge.
Makes 500 ml dressing.

Serve with a mixed leaf salad topped with fried bits of chicken and chorizo sausage strips, croutons and shavings of Parmesan.
