KETO SWEET AND SOUR SAUCE
When you need a bit of keto/diabetic friendly sweet and sour (& slightly hot) flavour… great in stir-fries, over fried eggs…anywhere!
- 2 teaspoons coconut oil
- 2 tablespoons tomato paste
- 2 tablespoons chilli and garlic paste
- 125 ml apple cider vinegar
- 125 ml water
- 125 ml allulose (or sweetener to your taste such as xylitol or erythritol)
- 1 teaspoon ginger powder
- 1 teaspoon granulated garlic
- 1 teaspoon blackstrap molasses or yacon syrup (optional if it spikes your blood sugar)
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- squeeze of lemon
- salt to taste
- 2 teaspoons black and white sesame seeds
- 1 ½ teaspoon xanthan gum/konjac powder
Heat the coconut oil and fry the tomato paste for 2 – 3 minutes over medium heat.
Add the rest of the ingredients and simmer for 5 – 7 minutes.
Sprinkle over the xanthan gum/konjac powder and stir well until the sauce starts to thicken.
Remove from the heat and stir through the sesame seeds.
Refrigerate and use over anything!!
