JOAN’S HOMEMADE MUESLI

  • 750 g packet of oats
  • 2 cups coconut
  • 1 cup chopped mixed nuts
  • 1 teaspoon vanilla essence, optional
  • Other options:  raisins, craisins, chopped mixed dried fruit, Rice Crispies, Post Toasties, Weetbix, etc
  • Syrup:
  • 2 cups sugar
  • 1 cup water

Mix oats, coconut and nuts all together in oven pan and bake for 10 mins 160°C.
In a saucepan boil the sugar and water until soft ball stage, or it coats the back of a spoon.
Add the vanilla essence (optional).
Pour the syrup in a zig-zag over the oats mixture in the pan and, mix with a fork, the syrup into the mixture. I use a braai fork because it’s easier.
Return the mixture to the oven and bake for about 20 minutes removing and stirring every 5 minutes to prevent clumps.
Switch oven off, open the door slightly and leave until the oven has cooled down.
Watch it as it burns easily.
Now you can add raisins, craisins, chopped mixed dried fruit, etc.
I make mine this way every two weeks.

Nota:
Dis die suikerstroop wat dit crispy maak.
My vriendin het 4 seuns en sy sê hulle eet so dat sy die basiese resep moet verdubbel en dan meng sy ook Rice Crispies, Post Toasties en fyn Weetbix by om dit meer te maak.
