JENNIFER’S AVOCADO RITZ

  • 1 large avocado, cut in half and peeled
  • 1 large onion, finely cut
  • 1 cube of garlic, grated
  • salt and freshly ground pepper
  • 500 grams prawns
  • 300 g tub of cream cheese
  • 1 heaped tablespoon Mrs Balls chutney
  • 1 bunch of flat leaf parsley

Gently fry the onion in a little butter with the garlic, salt pepper.
Add the prawns to the onion mixture and cook until prawns are pink and cooked.
Add the cream cheese (I used onion and chives flavour, but you can use the flavour of your choice) and the chutney. Slice the parsley and add.
Mix all together and place on top of the avocado halves.
