INSTANT POT LEMON AND HERB CHICKEN WITH POTATOES
Lockdown day #361🇿🇦 Lemon and herb chicken with potatoes, green beans, pumpkin, rice and gravy. Comfort food
- 8 pieces of chicken (drumsticks and thighs)
- 1 large onion, chopped
- 4 medium potatoes, peeled and cut in half
- Robertson’s Masterblend Zesty Lemon and Herb spice
- Robertson’s Chicken spice
- 200 ml water
- 50 ml lemon juice
- 1 heaped tablespoon white onion soup powder, stirred into a little water to a slurry
- oil to fry onions and chicken
Switch the pressure cooker onto Sauté medium. Pour 1 tablespoons of oil in and fry the onions gently for a minute.
Add the chicken pieces and sprinkle with the spices. Fry for another 3 minutes per side to get a bit of colour.
Pour the lemon juice and water over and stir to make sure there are no bits stuck on the bottom. Close the lid, turn the vent to steam position.
Press the Chicken setting for 15 minutes of steaming.
Once done release the steam immediately, open the pot and add the potatoes.
Set on manual setting for 8 minutes after closing the steam vent.
Release pressure immediately, open the lid and spoon the chicken and potatoes out with a slotted spoon into an ovenproof dish.
Roast in the oven on 210°C for a few minutes to obtain a golden colour while making the gravy in the pressure cooker.
Note:
I did the roasting part in my LG Solardom convection oven as it heats much quicker than my electric or gas oven.
Stir the slurry of soup powder and water into the cooking juices in pressure cooker on Sauté high until it starts to thicken. Serve with rice.
