IDEA FOR PREPARING TINS FOR BAKING FRUITCAKES

After a question about the amount of baking paper and newspaper to go inside and outside your tins when baking fruitcakes, I’ve found a much easier solution. I put at most 2 layers of baking paper inside the tins and then tie corrugated cardboard on the outside. Also cut cardboard circles to put the tins on in my gas oven and wrap some in foil for a lid. I keep these to use every year when baking.

What does this do for the baking process versus baking in a loose bottom cake tin, sprayed with spray and cook?
My bigger tins are springform tins. I prepare them exactly the same way as my smaller normal tins.

Because of the long baking process, you may find that the amount of sugar can cause the cake to stick to the tin if no paper is used.
Leonore Badenhorst:
It prevent the cake from forming cracks on top and baking too dark on top. Also prevent the raisons to burn on top and the sides and bottom to bake to dark, because then it is bitter.
