HIDDEN EGG MUFFINS
- 4 eggs
- 1 ¼ cup milk
- ¼ cup butter
- ½ cup mealie meal
- ¼ cup sugar
- 2 teaspoons baking powder
- 2 cups cake flour
- 1 teaspoon salt
- 6 boiled eggs
Beat eggs, milk, melted butter and sugar until creamy.
Add mealie meal, flour, baking powder, salt and mix until well combined.
Grease your muffin tray with butter.
Pour your batter half way then put an boiled egg at the centre of each muffin and fill up with the rest of the dough.
Bake at 180ºC for 20 – 25 min.
