GRILLED PEAR AND DANISH FETA GREEN SALAD
- 1 large ripe but firm pear
- ½ onion, cut into strips
- 1 ripe tomato, cut
- Calamata olives
- Danish feta, bite size pieces
- crisp salad leaves
- 1 medium sized ripe avocado
- ¼ red pepper, julienned
- ½ teaspoon brown sugar
- olive oil spray
- salad dressing of your choice
- 1 teaspoon lemon juice
- freshly ground salt and black pepper
- sugar coated fennel as garnish, optional
Peel and slice pear.
In a heated griddle pan, spray pear slices with a little olive oil and fry for 5 minutes on the side.
Turn and season with black pepper and sprinkle with brown sugar.
Grill 3 minutes more.
Take off heat and let cool.
Mix all other ingredients in a bowl, add lemon juice and salad dressing and lastly add grilled pear.
Season with salt and pepper.
Toss.
Garnish with sugar coated fennel seeds if preferred.
