GOATS’ CHEESE AND BASIL SCONES

  • 400 g plain cake flour
  • 200 g butter, chilled
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • a pinch of cayenne pepper, optional
  • 300 ml buttermilk
  • 200 g goats’ cheese
  • a handful of basil
  • 2 tablespoons grated cheese

Preheat the oven to 220ºC.
Put the flour in a bowl and rub the butter into it until crumbly.
Add baking powder, salt and cayenne pepper and mix lightly with your hands.
Add buttermilk, mix with a spoon until it just holds together.  Tip onto a floured work surface.
Fold the dough onto itself a few times while working the goats’ cheese and the basil into it.
Add the other cheese.  Cut the scones with a 5 cm cutter.
Bake for 10 – 15 minutes or until it has doubled in size!
