FRIED LEFTOVER PIES
Melt in the mouth leftover pies… or you can cook a stew from scratch. Just because you can. Sorry these are very rustic, but fantastic.
- Dough:
- 2 eggs
- 2 tablespoons oil
- 1 ½ cup cake flour
- 1 teaspoon baking powder
- pinch salt
- enough water to make a dough
- oil for frying
Mix eggs and oil with a fork. Add dry ingredients and a bit of COLD water bit by bit till a nice consistency. Sprinkle some flour on kitchen top and knead the dough till smooth and elastic, not sticky. Put back in the bowl and cover with clingwrap till ready to use.
Filling:
Mince your meat and vegetables all together. If you are using leftovers the flavour should be right, otherwise adjust.
Break off a piece of dough and roll it out very thin. Cut it into circles and put a spoonful of filling into each one. Fold over, and seal down with a fork. I just cut squares and fold it over.
Fry on one side till golden, turn over and brown on the other side.
Put on paper towel to drain and enjoy.
Notes:
This dough is not good for oven use.
Delicious on it’s own or with a bowl of soup.
