FREEZER BISCUITS WITH VARIATION

Ek het choc chip, cinnamon, cherry en gemmer gemaak.
Wanneer ek maak dan maak ek 2 rolle van 1 geur en deel die deeg vir die twee rolle. As ek 2 verskillende geure moet maak, dan half ek die bestanddele en maak 1 rol.

  • 250 g butter
  • 4 cups cake flour
  • 2 cups sugar
  • 2 eggs
  • 2 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 1 teaspoon salt

Cream sugar and butter together.
Mix eggs, salt and vanilla together and add to mixture. Mix well.
Sift 2 cups of flour, add to mixture and mix.
Divide mixture in two and add as much or as little cherries (250 g) 0n to one half and cinnamon (3 tablespoons) to the other half. Mix till well combined.
Sift again 1 cups of flour with 1 teaspoon baking powder in each mix and knead well.
Form in a roll,  wrap in cling wrap and freeze.
You can also use choc chip or any spices and fruit as desire.

To bake take out 30 min before and slice disks and bake for 10 to 12 min to golden brown at 180 ºC.

  • Ginger biscuits:
  • 125 g butter
  • ½ cup brown sugar
  • 1 egg
  • 2½ cups cake flour
  • 1 teaspoon bicarbonate of soda
  • 6 teaspoons ginger
  • 2½ tablespoons syrup

Cream margarine and sugar till light and fluffy. Add egg and beat well.
Gradually add dry ingredients and syrup. Mix well.
Knead lightly. Form roll and wrap in cling wrap.
To bake take out 30 min before and slice disks and bake for 10 to 12 min to golden brown at 180 ºC.
