FLAPJACKS WITH STRAWBERRY JAM

  • Jam:
  • 500 g (2 punnets) of strawberries
  • 1 ½ cups of sugar
  • juice of ½ a lemon
  • zest of ½ a lemon

Add everything together and let it cook on stove for 45 min to 1 hour on a medium heat .
Cool and enjoy. Keep in a glass jar in the fridge.

  • Flapjacks:
  • 1 ½ cups cake flour
  • 4 teaspoons baking powder
  • pinch of salt
  • 1 cup of milk
  • 1 egg
  • 1 ½ teaspoon vanilla essence
  • ¼ cup butter

Mix wet ingredients and keep aside.
Mix the dry ingredients together, add the wet ingredients and mix well.
Drop 1/3 cup of mixture onto a hot greased frying pan. When bubbles form on top, flip over.
Serve with the jam or as prefered.

Ek het die volgende bygevoeg – 1 knypie sout en ¾ tot 1 teelepel crushed ginger (afhangende van jou smaak). Heerlik uitgekom.

Made some strawberry jam. I added one small granny smith apple sins I cooked the jam using my thermometer and it was still runny after reaching the jam stage.
