FESTIVE FROZEN CREAM CHEESE LOAF
Personally I would add double the amount of grated white chocolate next time I make it. And I would definitely make it again! Perfect dessert for a hot day.
- 2 tubs full fat cream cheese
- 250 ml whipped cream
- 60 ml castor sugar
- 5 ml vanilla essence
- 100 g chopped pecans (next time I will substitute with pistachios)
- 70 g dried cranberries
- 80 g coarsely grated white chocolate
Blend the cream cheese, castor sugar, vanilla, cranberries and chopped pecans.
Fold the grated chocolate and whipped cream in and spoon into a small loaf tin that has been lined with clingwrap and sprayed with non stick.
Freeze overnight until firm. Turn out onto serving platter and garnish with variety of berries and cherries.
