ELIZE’S PORK NECK WITH PASSION FRUIT
This pork in is baked in a blended passion fruit, orange and chilli mixture until tender. Two hours later, with minimal effort required on your part, this beautifully seasoned pork is your new best friend.
- 4 pork neck chops
- 4 passion fruit, cut in half and pulp reserved
- 2 teaspoons brown sugar
- 1 onion, chopped in slices
- 1 green pepper, julienne cut
- 2 cloves garlic, chopped
- 1.5 cm ginger root, chopped
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 green chilli, chopped
- 60 ml orange concentrate
- 250 ml water
- ½ teaspoon Chinese five spice
- salt and pepper
- 1 tablespoon rosemary leaves, chopped
Mix all ingredients together, place pork chops in an oven proof dish and marinade in refrigerator for 4 hours.
Bake covered in a preheated oven at 160°C for 1.5 hours. Remove dish from oven.
Set oven to grill.
Thicken sauce in a small saucepan with a bit of Maizena paste.
Grill the meat until brown.
Serve meat with sauce, samp and beans, or your choice of starch and vegetables/salad.
