ELIZE’S PERI-PERI PRAWNS
The biggest work is to clean and cut the prawns, but this can be done early in the day. This recipe is just delicious!
- 500 g prawns
- 125 ml butter
- 2 gloves of garlic, finely chopped
- ½ teaspoon fish spice
- 1 tablespoon lemon juice
- 100 ml Nando’s peri-peri sauce (Mild or hot or Lemon and Herb sauce)
- salt and pepper to taste
Devein prawns and remove legs, lay down on back and butterfly from bottom.
Melt the butter on defrost in microwave oven, mix in the garlic, lemon juice and fish spice.
Dip each prawn in the melted butter mix and layer in a tray.
Season with salt and pepper.
Drizzle remaining butter over the prawns.
Refrigerate for 30 min or more. Prawns must be baked the same day.
Bake in a preheated oven at 180°C for 15 min. Turn after 7 min.
Serve with a pineapple salsa and fried rice.
