ELIZE’S MINI-QUICHES

So gou en so maklik. Dit is so warm hier en niemand is lus vir warm kos nie, saam met gevulde eiers, aartappel en ander slaaie net die regte ding vir die naweek se baie rugby. En kos vir naweek sommer klaar.
Mens kan enige iets gebruik…ham, polony, koue hoender. Net wat jy wil die basics bly dieselfde. Jy kan murgpampoen, sampioene, peppers gebruik vir vegan. Spinasie en feta en mushrooms. Maak waarvan jy hou.
  • 1 tin (410 g) good quality viennas, diced finely
  • 1 tin (410 g) corned beef, diced
  • 450 ml milk
  • 500 ml grated Cheddar cheese
  • 125 ml cake flour
  • 3 eggs, beaten
  • 1 medium onion, chopped
  • 5 ml salt
  • 5 ml mustard powder
  • 15 ml Dijon mustard
  • 5 ml dried parsley
  • ½ green pepper, finely chopped

Sauté onion in a little oil till translucent, add green pepper and fry 2 minutes more. Let cool.
Add all other ingredients to onion mixture. Mix well.
Spoon into a greased muffin tin.
Bake 20 – 25 minutes  at 180ºC.
