ELIZE’S HEALTHY CURRY YOGHURT-BASED CHICKEN THIGHS

A healthy chicken thigh recipe that is tender and packed with flavour, thanks to a yoghurt-based marinade. The marinade also works well with pork, shrimp or firm fish.

  • 1 cup plain yogurt
  • ⅓ cup grated onion (1 medium)
  • 3 tablespoons curry powder
  • 1 teaspoon mother-in-law curry powder, optional, if you prefer a spicier version
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon crushed red pepper
  • 4 large or 8 small bone-in chicken thighs, we prefer skin on, but you can remove it

Whisk yogurt, onion, curry powder, mother-in-law powder, oil, salt and crushed red pepper in a shallow pan.
Add chicken and turn until well coated.
Cover and refrigerate for at least 4 hours.
Preheat grill to medium-high.
Remove chicken from marinade and grill, turning once or twice, basting every 10 minutes with leftover marinade until no longer pink in the center.
Will also work well on the BBQ. Garnish with cilantro.
