ELIZE’S CABBAGE AND BACON BAKE

When your family member is on a diet, you need to improvise. Dull cabbage and potato mash turned into a gourmet dish.

  • 3 cups shredded cabbage
  • 1 potato, peeled and cut into smaller chunks
  • ½ onion, cut into slices
  • salt and pepper
  • ½ green pepper, cut into cubes
  • 250 g bacon, cut into cubes
  • 1 cup grated Cheddar cheese
  • 1 cup fresh breadcrumbs
  • 1 teaspoon mustard powder

Boil vegetables with salt and pepper in water until tender, then mash.
Layer the cabbage mash in a greased dish.
Fry the bacon in a little oil and spread evenly over the mashed vegetables.
Combine the grated cheese, mustard powder and breadcrumbs and spread over the bacon.
Bake 15 min or until brown in a pre-heated oven at 180ºC.
Serve with cheese grillers.
