EGGPLANT ENVELOPES
- Make a beer batter with:
- 125 ml self raising flour
- 5 ml baking powder
- 125 ml beer
Refrigerate the batter.
Peel and slice eggplant in thick slices with a slit in the centre.
Fill slit with cheese slices, tomato slices and a few drops of Tabasco sauce.
Secure with a toothpick and dust with cake flour.
Dip eggplant envelope in beer batter and fry in warm oil until done and golden brown in colour.
EIERVRUG KOEVERTE
- Maak ‘n bier beslag met:
- 125 ml koekmeel
- 5 ml bakpoeier
- 125 ml bier
Plaas in die yskas.
Skil en sny eiervrug in dik skywe met spleet in middel, maar nie regdeur.
Vul gleuf met kaas, tamatie, kaas en ‘n paar druppels tobasco, steek gleuf toe met ‘n tandestokkie en “dust” met koekmeel.
Doop gevulde eiervrug koeverte in beslag en braai in warm olie tot goudbruin.
