EGG STUFFED, BACON WRAPPED MEATLOAF

Dit maak van maalvleis iets baie spesiaals en heerlik.

  • 500 g beef mince
  • 1 egg
  • 3 tablespoons almond flour
  • ½ red onion, finely chopped
  • 2 tablespoons chopped parsley
  • 1 teaspoon dried chives
  • 1 tablespoon Worcestershire sauce
  • salt and pepper to taste
  • 4 hard boiled eggs
  • 10 – 12 rashers streaky bacon

Mix all ingredients except the hard boiled eggs and bacon well together in mixing bowl.
Divide the mixture in 2, and loosely flatten 1 half of the mixture in a baking tin, lined with parchment paper.
Place the boiled eggs on top of the meat mixture in the pan, and cover the eggs with the other half of the meat mixture.
Loosely press the meat together, covering the eggs.
Cover the meatloaf with the streaky bacon.
Place the meatloaf in a preheated oven of 190ºC and bake for 60 – 70 minutes.
Slice and serve.
