  • ½ cup butter, melted
  • 1 cup castor sugar
  • 2 large eggs
  • 2 cups cake flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 260 g crushed pineapple, drained
  • 1 teaspoon vanilla essence

Pre heat the oven to 180ºC.
Beat together the butter and sugar with an electric mixer.
Add the eggs and vanilla and beat until well combined. Stir in the pineapple by hand.
Sift together the flour, baking powder, baking soda and salt.
Add the flour mix to the butter mix and mix by hand until just combined.
Spoon the batter into a 9 x 5-inch loaf pan that’s been sprayed with non-stick cooking spray.
Bake at 180ºC for about 50 minutes or until a toothpick comes out clean.
Cool about 10 minutes before removing from the pan to cool completely.
