EASY BANANA PANCAKES
- 2½ bananas
- 2 eggs
- pinch of salt
- coconut oil
- cinnamon
- almonds and chai seeds for decoration
- honey
Mash the bananas with a fork, add the eggs and the salt and mix the batter thoroughly.
Fry in coconut oil until lightly browned and cooked through and sprinkle with cinnamon.
For decoration I sprinkled chai seeds and roasted almonds on top and drizzled the pancakes with some honey.
Serve immediately.
Note:
The bananas I used were not very soft, so I peeled them and put them in the microwave for a few seconds.
