EASTER EGG CHOCOLATE AND PEANUT BUTTER BIRD NESTS

I had a bit of fun today, creating these Easter Egg Nests – with only 3 ingredients. Plus whatever you wish to use for the eggs.

  • 1 package 16 oz. (454 g) Chocolate Candy – I made it vegan, so used Enjoy Life Vegan Chocolate
  • ¼ cup peanut butter
  • 3 cups chow mein noodles, cooked
  • Cadbury Mini Eggs (Due to making it vegan, I used Rowntree Jelly Tots and Rowntree’s Fruit Pastilles as both are vegan-friendly)

In a large microwave bowl, add the chocolate and peanut butter and melt for one minute and stir.
If needed, add 15-30 second increments, until fully melted.
Add the chow mein noodles and lightly mix until fully covered.
Leave it on the counter or if in a rush, in the fridge in order for the chocolate to barely start to set.
Drop by the spoonful in a small silicon mould or if you do not have that onto wax paper.
Give it another minute or three and form use a small cup (I used my 1/4 cup measuring) to indent the nests.
Be careful not to press too deep or hard to crack the chow mein noodles and also do not press through to the bottom.
You still need a good layer of chocolate with the chow mein noodles at the bottom.
Leave it in the fridge to set and decorate as you wish.
