DINNER MUFFINS
I made these this weekend. The recipe I used had plain all-purpose flour, but also asked for baking powder. I added a cup of shredded cheese and some chicken viennas. The kids and wife loved it. I doubled the recipe and got 12 rolls. The baking time was also a bit longer – 25 minutes.
- 1 cup plain cake flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ cup milk
- 2 tablespoons mayonnaise
- Optional:
- ½ cup grated cheese
- 3 chicken viennas, cut into pieces
Combine all the ingredients (except viennas) and spoon into a greased muffin pan. Press cut pieces of viennas into the unbaked rolls. Cook in a preheated oven at 180 °C for 15 minutes until golden brown.
