This tart I have made for many years. It is always a hit at parties for young and old. Simple to make.

  • Dough:
  • 2 cups cake flour
  • 56 gram butter
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • 2 level teaspoons baking powder
  • 118 ml milk
  • Filling:
  • 2 large onions
  • 2 tablespoons butter
  • 1 tin asparagus
  • 125 ml cream
  • 1 egg
  • ½ cup grated cheddar cheese

Rub butter well into flour with fingertips. Add milk to make dough.
Press into buttered tart dish, and set aside while you prepare the filling.
Slice onions in rings. Fry in butter. Put the onions on top of the dough.
Put tin of asparagus on top of onions.
Mix together cream and egg. Pour over onion and asparagus. Top with grated cheese.
Bake at  200ºC for 20 minutes.

I often add a tin of slices mushrooms as well with the asparagus.
