CURRY CHICKEN FILLET ON A FRUITY BED
New own recipe. Love the taste of it.
- For the base cut the following in bite size blocks and mix toghether:
- 1/2 paw paw
- 1 melon
- 1 avocado
- 3 sliced canned peaches
- 3 chicken fillets
- butter to fry
- 1 teaspoon butter masala
- 1 cup of fresh cream
- 2 tablespoons mayonnaise
Butterfly the chicken fillets and fry in butter with spice of your choice. Remove the chicken from the pan when done but not dry or over cooked. Add a masala, fresh cream and mayonnaise to the same pan. Cook until flavours are mixed and add the chicken fillets back into the sauce. Just cook for few minutes.
Dish a bed of fruit mixtures, add chicken fillet and drizzle sauce over all.
