CREAMY CUCUMBER MOULD
- 1 large English cucumber, peeled and grated
- 1 small onion, peeled and grated
- 1 tablespoon chives, chopped
- 2 tablespoons cream cheese (any flavour)
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
- coarsely ground black pepper to taste
- 1 packet greengage jelly
- 5 ml gelatin powder
- 175 ml boiled water
Put grated cucumber in a sieve and let drain for 15 – 20 min. You can use a clean cloth and press most moisture out.
Combine cucumber, chives, onion, cream cheese, mayonnaise, pepper and lemon juice in a bowl.
Dissolve jelly powder and gelatin in hot water.
Add this to the cucumber mixture and mix well.
Spray the moulds, individual moulds or a ring mould, with Spray and Cook then pour in mixture, refrigerate until set.
