CREAM-STYLE SOUP MIX WITH SMASH

This easy soup mix is a wonderful substitute for canned cream soup in a recipe. It’s great to have on hand for those nights when you need to whip up supper in a hurry. Hubby had this for supper so it gets the thumbs up!

  • 2 cups full cream milk powder
  • ½ cup plus 2 tablespoons Maizena
  • ½ cup Smash
  • ¼ cup Ina Paarman chicken stock powder
  • 1 teaspoon dried organum
  • 1 teaspoon dried thyme
  • 2 teaspoons dried onion flakes
  • 1 teaspoon dried celery flakes (I dry and crumble my own celery leaves)
  • 1 teaspoon dried crushed garlic
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon white pepper

In a small bowl, combine all ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Use as a substitute for half of a 410 g can of condensed cream of chicken, mushroom or celery soup.
In a microwave-safe bowl, whisk ⅔ cup water and 3 tablespoons soup mix.
Microwave, uncovered, on high for 2 to 2 ½ minutes or until thickened and bubbly, whisking occasionally.
Thin with water if it is too thick.
For mushroom soup, add ¼ to ½ cup sauteed sliced mushrooms.
For celery soup, add ⅛ teaspoon celery salt or one sauteed sliced or chopped celery rib.

Note:
This is so delicious. I think the Smash made it thicker, so I added extra water. I used my own dried crushed celery leaves in the recipe. Maybe tapioca powder would work also? I used full cream milk powder… Couldn’t get low fat.
