CORN FRITTERS
- 2 eggs
- ½ cup all-purpose flour
- ½ teaspoon salt
- 1 can cream style corn
- 1 can whole corn, drained
- 1 teaspoon baking powder
- oil, for frying
Beat eggs, salt and both cans of corn together.
Sift flour and baking powder together. Mix in with egg mixture.
Heat a little oil in a non-stick pan, spoon a couple of spoonsful (size your prefer) into the warm oil and fry till golden on each side; when bubbles appear in oil on sides, turn over.
Place on paper towel while you fry the rest.
