COCONUT BISCUITS
Old recipe but the best.
- 250 g butter
- 2 eggs
- 1 teaspoon vanilla essence
- 2 ½ cups desiccated coconut
- 1 cup castor sugar
- 1 teaspoon baking powder
- 2 cups cake flour
Cream the butter and sugar until well blended.
Add the eggs and vanilla and mix well.
Add the rest of dry ingredients to make a soft dough.
Take caution whilst adding the flour; add a little at a time until you get the perfect biscuit dough.
Roll out and use a cutter to make shapes.
Transfer to a baking sheet and bake the biscuits at 180ºC for 12 to 15 minutes.
