CINNAMON, RAISINS AND OATS DROP COOKIES
- 1 cup white whole-wheat flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ⅔ cup packed light brown sugar
- 6 tablespoons unsalted butter, melted
- 1 large egg
- 1 ½ teaspoons vanilla extract
- 1 cup rolled oats
- ½ cup raisins
Preheat oven to 180ºC. Lightly spray a baking sheet with cooking spray.
Whisk flour, baking powder, cinnamon and salt in a bowl.
Whisk sugar, butter, egg and vanilla in a large mixing bowl.
Add the flour mixture, oats and raisins to the egg mixture and stir with a wooden spoon until well combined.
Drop level tablespoons of batter onto the prepared baking sheet, more or less 12 cookies at a time depends on the size of the baking sheet.
Bake until golden brown on the bottom, 15 – 20 minutes.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Repeat with the remaining batter if necessary.
