CILANTRO LIME GRILLED CHICKEN
- 4 chicken breasts (one can also use drumsticks or other pieces instead of breasts)
- Marinade:
- 3 tablespoons olive oil
- ¼ cup lime or lemon juice
- 3 garlic cloves, crushed
- 3 tablespoons cilantro (fresh coriander), finely chopped
- 1 teaspoon salt
- 1 teaspoon paprika
- ½ teaspoon black pepper
- 1 teaspoon honey
- Extra:
- spinach or any green veggies
Mix ingredients for marinade.
Cover chicken in the marinade for 30 minutes to 2 hours. Longer the better.
Grill on the braai or panfry the chicken for 6-8 minutes per side.
When I panfry, after 1st turn, I add raw chopped greens (spinach or whatever greens I have) to just steam and fry in marinade and chicken juices. Add a little bit extra salt if you add greens.
