  • 4 chicken breasts (one can also use drumsticks or other pieces instead of breasts)
  • Marinade:
  • 3 tablespoons olive oil
  • ¼ cup lime or lemon juice
  • 3 garlic cloves, crushed
  • 3 tablespoons cilantro (fresh coriander), finely chopped
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon honey
  • Extra:
  • spinach or any green veggies

Mix ingredients for marinade.
Cover chicken in the marinade for 30 minutes to 2 hours. Longer the better.
Grill on the braai or panfry the chicken for 6-8 minutes per side.
When I panfry, after 1st turn, I add raw chopped greens (spinach or whatever greens I have) to just steam and fry in marinade and chicken juices. Add a little bit extra salt if you add greens.
