CHORIZO WITH POTATO AND GREEN BEANS
- 3 chorizo sausage
- 4 potatoes medium peeled
- 3 garlic cloves, finely chopped
- 1 onion, finely chopped
- 2 tablespoons olive oil
- oil for frying potatoes
- 2 bay leaves
- 1 teaspoon paprika
- 500 g French fresh beans, trimmed and cut into bite size
Cut chorizo, potatoes and beans into bite-size pieces.
Sauté chorizo, garlic and onion, bay leaf and paprika for five minutes in olive oil.
Parboil potatoes for 5 minutes in boiling water and drain, fry until crisp in oil in a separate saucepan.
Drain on kitchen towel, keep aside.
Steam beans in double cooker until al dente (7 min), immerse in ice water to retain colour.
Add beans to onion mixture and sauté for a further five minutes, remove bay leaf, mix in crisp potato bites, season and serve immediately.
