CHOCOLATE MACAROON CUPCAKES
- For the cake:
- ½ cup of sugar
- 125 g butter
- 3 egg yolks
- ½ teaspoon vanilla essence
- 1 cup cake flour
- 1½ teaspoons baking powder
- 1¼ tablespoons cocoa powder
- ¾ cups of milk
- For the filling:
- 3 egg whites
- ½ cup of icing sugar
- 1¼ cups of desiccated coconut
- Extra:
- melted chocolate
Beat together butter, sugar, egg yolks and vanilla essence.
Add dry ingredients and milk and leave aside.
Beat egg whites till stiff and then stir in icing sugar and coconut.
Pour ⅔ of the cake mixture into greased cup cakes pans.
Top with a teaspoon of egg white mixture and then followed by the rest of the cake mixture.
Bake at 180 ºC for 20 minutes.
Drizzle with melted chocolate.
