Cook: 30 minutes | Servings: 24 muffins


  • 3 cups cake flour
  • 320 ml castor sugar
  • 1 ½ cups cocoa powder
  • 1 ½ tablespoons baking powder
  • pinch of salt
  • 4 eggs
  • 1 ½ cups boiled water
  • ½ cup sunflower oil
  • 2 cups full cream milk
  • 5 ml vanilla essence
  • 3 cups of chocolate chips

Put the oven on 180°C.
In a mixing bowl, add the flour, cocoa powder, castor sugar, baking powder and salt and mix with a whisk.
In a jug add the sunflower oil, boiling water, full cream milk and vanilla essence and mix well till combined. Now slowly add the wet ingredients from the jug to the dry ingredients while mixing, till it is all mixed well.
Add the eggs to the chocolate chip mixture and mix well till the mixture is smooth.
After the eggs have been mixed in, add the 3 cups of chocolate chips.

In 2 muffin pans spray with spray and cook and put the chocolate chip mixture into each muffin pan till full.
Bake in the oven for 30 min. until the cake tester comes out clean.
Let the muffins cool down on a cooling rack.
After it is cooled, serve and enjoy with cream or coffee!
