CHINESE SWEET AND SOUR CHICKEN WITH FRIED RICE
- Rice:
- cooked rice (portion size for the number of people)
- 2 eggs
Cook rice in the morning or the night before to cool in order to be fried.
Just before serving, scrambled the eggs in a little oil on the stove and mix with the rice, fry till warmed up.
- Batter:
- 2 cups cake flour
- ½ cup Maizena
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 tablespoon oil
- chicken breasts (portion size for the number of people)
- spice to taste
- cold water to make a dough the consistency of pancakes
- oil for deep-fry
Put dry ingredients in a bowl and make a well in the center.
Add oil and water, mix well and let rest for 15 minutes.
Slice chicken breasts into strips, spice to taste and add to the batter.
Heat oil and fry chicken strips until a nice golden brown.
Drain on paper towel.
- Sweet and Sour Sauce:
- 2 tablespoons tomato sauce
- 4 tablespoons sugar
- 125 ml vinegar
- 125 ml pineapple juice
- 2 teaspoons Maizena mixed with a bit of water
- ¼ teaspoon salt
Mix the sauce ingredients together. On medium heat bring everything to the boil while stirring.
Boil for a few minutes till sauce thickens.
Serve:
Place some fried rice in each plate, top with the chicken pieces and drizzle with the sauce.
Enjoy.
Note:
You can use beef strips or prawns as well.
