CHILLI AND HONEY ROASTED SWEET POTATOES
I used a delicious Sri Lankan chilli paste that we received from a lovely colleague of my husband. Thanks Nilanka!
- 1 sweet potato, cut in quarters
- 2 teaspoons olive oil
- 1 tablespoon honey
- 1 teaspoon chilli powder
- ½ teaspoon sweet or smoked paprika
- salt and cracked pepper to taste
- 1 lime, halved
- fresh chopped parsley
Preheat oven to 180 ºC.
Brush the sweet potato quarters with olive oil, skin included.
Season sweet potato with salt and pepper, chilli powder and paprika. Bake for 20 mins.
Remove from oven and smear the sweet potato with honey.
Return to oven and bake for another 10 minutes.
Once the sweet potatoes are tender, remove from oven.
Squeeze fresh lime juice over and add parsley.
