CHICKEN SATAY SALAD
- 2 chicken breasts, skinless, boneless
- 2 tablespoons of peanut sauce
- 1 tablespoon vegetable oil
- ½ teaspoon chili powder
- ½ teaspoon salt
- Salad:
- 5 tablespoons peanut sauce
- 3 tablespoons oil
- 2 tablespoons lemon juice
- 2 tablespoons water
- salt and pepper to taste
- 1 chopped leaf lettuce, torn coarsely
- ½ head romaine, torn coarsely
- ½ cucumber, cut into matchsticks
- 1 medium carrot, cut into matchsticks
- 1 red pepper, thinly sliced
- ¾ cup cilantro, chopped
- 3 tablespoons peanuts, decoration
- any suitable dressing sauce to drizzle over
Coat chicken breasts with two tablespoons peanut sauce, vegetable oil, chilli powder and salt.
Grill about three minutes per side.
Salad:
Whisk the peanut sauce, oil, lemon juice, water, salt and pepper.
Combine with the chopped leaf lettuce, romaine, cucumber, carrot, red pepper and cilantro.
Top salad with chicken, peanuts and drizzle with dressing.
Note:
Serve with deep fried noodles for added crispiness.
