CHICKEN FILLET IN BALSAMIC AND PINEAPPLE VINAIGRETTE
Chicken fillet marinated in balsamic and pineapple vinaigrette, dusted with flour and pan-fried. Served on garlic bread wedges with red onion, tomato slices, pineapple and Cheddar. Delicious Friday night food!
- 4 large chicken fillets, flattened
- Knorr balsamic and pineapple vinaigrette
- cake flour
- oil for frying
Flatten the chicken fillets and covered in the vinaigrette in a dish.
Leave to marinate for at least half an hour.
Dip each piece of chicken in flour and shallow fry in medium hot heavy bottomed pan, turning after a few minutes.
The chicken will be soft from the marinate so take care not to overcook it.
Lovely to use in any dish or on a burger.
