CHEESE MUFFINS WITH VARIATION
Ek het 15 medium muffins uit die resep gekry. En vanoggend enetjie net so effens warm gemaak in mikrogolf en met botter saam met my koffie geniet. En toe nog ene ….
- 240 g (430 ml) self raising flour
- 3 ml salt
- 10 ml baking powder (yes that is correct! do not leave it out)
- 1 egg
- 225 ml milk
- 50 ml melted butter
- 250 g extra mature Cheddar
- cayenne pepper to taste
Preheat oven to 220ºC (or on Thermofan 200ºC).
Put flour, salt, cayenne pepper and baking powder in mixing bowl. Beat the egg into the milk.
Melt the butter and measure the exact amount needed. Add to the mix and egg mixture and fold into the flour. Do not over mix. Add the grated cheese and fold into the batter.
Spoon into greased muffin tins (I prefer using paper cups lightly sprayed with non stick spray) and bake for 15 – 20 minutes on the middle shelf of your oven.
Serve with butter, your favourite jam, biltong powder etc.
I also added a bit pinch of cayenne pepper.
Next time I will substitute about half a cup of flour for polenta or mieliemeel and add some crumbed blue cheese, thinly sliced biltong and a handful of raisins soaked in port overnight.
