We are always looking for something different and easy to make with what we have. These were delicious and a big hit with all the campers at our farewell street braai.

  • 500 g carrots, grated
  • 4 eggs
  • ¼ cup cake flour
  • ¼ cup bread crumbs
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • 1 pinch ground black pepper
  • 2 tablespoons vegetable oil

Mix the grated carrots, eggs, flour, bread crumbs, garlic, salt and pepper together in a medium mixing bowl until well combined. Form into patties.
Heat oil in a frying pan over medium-high heat.
Add the carrot patties and fry until golden brown on each side.

I used smokey grill flavored breadcrumbs to give it some extra special flavors.
