CARAMELIZED ONION, CHEDDAR, CORN AND MARMITE SKILLET BREAD
- Dough:
- 30 ml oil
- 1 onion, sliced
- 45 ml brown sugar
- 250 ml cake flour
- 250 ml maize meal
- 60 ml light brown sugar
- 15 ml baking powder
- 2.5 ml salt
- 2 ml cayenne pepper
- 250 ml buttermilk
- 2 extra large eggs
- 45 ml melted butter
- 1 x 410 can whole kernel corn, drained
- 250 ml grated cheddar cheese
- Topping:
- 60 ml butter
- 45 ml Marmite
- 2 ml thyme
Heat the oil and fry onion until soft. Add sugar and salt and stir. Cook through until caramelized. Set aside.
Combine flour, maize meal, sugar, baking powder, salt and cayenne pepper in a bowl.
Beat the buttermilk, eggs and melted butter together.
Add the egg mixture to the dry ingredients along with the corn and cheese.
Mix well and pour into greased loaf tin or baking dish.
Arrange caramelized onion on top.
Bake in pre heated oven at 200 ºC for 20 – 25 minutes.
For the topping:
Melt the butter and marmite together. Add thyme and mix well.
Pour over the bread as soon as it comes out of the oven.
