CAPSICUM AND FETA PORK LOIN CHOPS
- 50 ml olive oil
- 20 ml butter
- 4 pork loin chops
- ½ onion, sliced
- 250 ml frozen of fresh, chopped capsicum/peppers
- 1 teaspoon paprika
- 1 teaspoon smoked paprika
- 1 teaspoon thyme
- salt and pepper, to taste
- 100 ml water
- 100 ml cream
- squeeze of lemon
- 75 g crumbled feta cheese
Sear the pork chops in the oil and butter over high heat until browned on both sides. Remove from the pan.
Fry the onion in the oil and butter left behind in the pan for 8 minutes.
Add the capsicum, spices and seasoning. Fry for 10 minutes more.
Add the water, deglaze the pan and simmer for 5 – 8 minutes.
Add the cream and lemon and stir through.
Crumble the feta over the chops and grill for five minutes in the oven.
Cover the chops with the sauce and serve.
