CACAO AND BLUE CHEESE COOKIES
- 8 tablespoons vegetable oil
- 1 large egg
- 1 cup self-rising flour
- 1 teaspoon vanilla essence
- 2 tablespoons cacao powder
- ½ cup white sugar
- about 46 g blue cheese
Preheat oven to 170ºC.
Spray baking sheet.
In a bowl, crumble the blue cheese and mix with the flour (so that they don’t clump together).
Add the rest of ingredients.
Form 6 (almost tennis ball-size) balls, place on sheet (not too close, they do spread) and bake for 10 minutes.
Remove from oven and gently flatten the cookies with the bottom of a whisky glass (or mug). Let cool.
