BULGAR WHEAT SALAD WITH ZUCCHINIS

“Healthy salad for those warm days. Serve with a barbecue, grilled chicken or even cold meats.”

  • 120 g fine bulgar wheat
  • 1 beef stock cube
  • 1 small onion, chopped
  • 1 small red bell pepper, sliced
  • 2 small zucchinis, cubed
  • 1 medium tomato
  • ½ cucumber, peeled, cubed
  • 2 spring onions, finely sliced
  • handful flat-leaf parsley, chopped
  • handful mint leaves, chopped
  • 75 ml olive oil
  • 2 tablespoons lemon juice

Soak the fine bulgar wheat in hot water for 30 minutes. (dissolve stock cube in the hot water before)
Cover the wheat with cling film and set aside to cool.
Fry the onion, zucchini and red pepper until brown.  Set aside to cool.
Add the onion mixture to the wheat.
Deseed and chop the tomato and add finely sliced spring onion, cucumber, parsley and mint leaves.
Finally, stir in the olive oil and lemon juice and season well.
