BREAKFAST OR LUNCH BAKE
Leftover mince, egg and cheese served with guacamole! Very filling, very tasty and keto/low carb and diabetic friendly. A very handy recipe to use up a few bits and bobs in the fridge and turn it into a proper meal on a cold afternoon.
- 1 small onion, chopped
- ½ green or red pepper, chopped
- 8 slices salami, chopped
- 1 – 1 ½ cup leftover savory cooked mince
- 6 eggs
- 125 ml cream
- 1 teaspoon granulated garlic
- salt and pepper to taste
- 1 cup grated cheese
- parsley for sprinkling over the top
Fry the onion and pepper in a bit of oil until soft, add the salami and fry 5 more minutes.
Add the mince, heat through and drain off any extra oil.
Spread the meat mixture on the bottom of an oiled 23 x 15 x 5 cm baking dish.
Beat the egg, cream, garlic, salt and pepper in a bowl and pour over the meat.
Sprinkle cheese and parsley over and bake for 30 minutes at 180ºC.
Let it cool for a few minutes, then slice and serve.
