BREAKFAST FRITTERS
Add a touch of sweetness to your breakfast or brunch with these warm and crispy little fritters. Perfect with a steaming cuppa!
- Cooking oil, for deep frying
- 500 ml (2 cups) self-raising flour
- 15 ml (1 tablespoon) sugar
- 2.5 ml (½ teaspoon) salt
- 80 ml (⅓ cup) water
- 160 ml (⅔ cup) milk
- 2 eggs, beaten
- 10 ml (2 teaspoons) vanilla essence
- 15 ml (1 tablespoon) cooking oil
- 250 ml (1 cup) apples, peeled and diced
- icing sugar, for dusting
Heat enough cooking oil in a deep-fryer or pot. In a large mixing bowl, mix the flour, sugar and salt. Add the water, milk, eggs, vanilla essence and oil to the dry ingredients.
Mix well, then add in the apples. Drop spoonfuls of the batter, about 15 ml, into the hot oil. Deep-fry until golden brown. Remove with a slotted spoon and drain on a paper towel.
Dust with icing sugar.
Serve warm.
Serve:
Perfect on its own or dipped in Greek yoghurt topped with honey or granadilla pulp.
Garnish:
With icing sugar, cinnamon sugar, glaze or caramel sauce.
