BREAKFAST CUPS MADE WITH BREAD

Breakfast cups with balsamic rosa tomatoes – Ingredients would depend on how many people you serving,
this serves 3.

  • 6 slices white bread
  • 3 eggs
  • grated cheese
  • 6 slices sandwich ham, diced
  • ½ punnet of mushrooms, sliced and lightly fried
  • tomato and onion relish

Pre-heat the oven to 180ºC
Cut out rounds on the bread. (I used a 500 ml beer glass).
Line a greased muffin pan with the bread rounds, bake for 3 minutes.
Fill with diced ham, mushrooms, grated cheese, spoon of tomato and onion mix, top with an egg.
Season and bake in a pre-heated oven until egg is set, ± 15 minutes.

Balsamic rosa tomatoes
Lightly fry rosa tomatoes in coconut oil until skins are soft, add a dash or two of balsamic vinegar, cook for a couple of minutes and serve.

Note:
Next time I make it, I’ll flatten the bread with a rolling pin first as well.
