BOTTLED CURRY CABBAGE

Hallo all, about a week ago I asked for a Curried Cabbage recipe, eventually got to making it today😊.  Enjoy.

  • 1 large cabbage, shredded
  • 6 onions, chopped
  • 6 medium carrots, grated
  • 6 teaspoons salt
  • Sauce:
  • 4 cups sugar
  • 4 cups white vinegar
  • 10 ml ginger
  • 10 ml turmeric
  • 10 ml pepper
  • 5 teaspoons salt
  • 3 tablespoons Pakco/Rajah curry mix
  • 5 green chillies, optional
  • 2 tablespoons Maizena
  • cold water

Cook the cabbage, onions, carrots and salt in a large pot till almost soft.  Drain off the liquid, put back into pot and put aside while preparing the sauce.

Boil the sauce ingredients on low heat for approximately 10 minutes.  Add the cooked sauce to cabbage mixture and cook further for 15 minutes on low heat.  Mix the Maizena with a bit of cold water to form a paste.  Add this paste to the cabbage and cook for 10 minutes on low heat.

Bottle the hot cabbage in clean, sterilized bottles.  Close the bottles tightly and turn upside down to cool.
